I had a friend visiting last weekend. I won’t get into the details of that, but it meant a fair amount of eating out while she was here and not much eating after she left. I’m trying to get back into the swing of things food-wise now that I have some time to breathe and feel like I’m getting my life back a bit.
I bought a MacBook Pro today. I almost had a panic attack, but I’m kind of in love now. I’m still not quite sure how to use most of it, but I think I’m quickly learning.
So after spending a few hours getting the wireless hooked up, programs downloaded, files transferred, I was hungry. I’d been meaning to try the Warm Chickpea and Artichoke Salad recipe I found last week. I bought all of the ingredients. (Well, most of them. I keep forgetting to buy parsley and my garlic had gone bad, so I used dried minced garlic instead.) I dropped the amount of olive oil in the dressing to 2 tablespoons rather than 3. And it was pretty tasty. The lemon gave it a nice fresh tanginess and the almonds added a decent crunch.
I hope to go on a hike tomorrow. I should probably do some homework then, huh? Yeah. I have papers galore to write. Sigh.

Glad to hear you liked the salad. Good call on decreasing the oil in the dressing to 2 tbsp.
